Fellows Silvano Giraldin and Sergio Rebecchi’s reputations are almost legendary in their own lifetimes. Silvano, of course, is one of the hospitality industry’s best known for his front of house leadership at Le Gavroche while Sergio was top man under Forte at the Grosvenor House and later with Nico at Ninety Park Lane. Passionate about training, in 1985 they were the protagonists behind the formation of Les Arts de la Table, the font of house discipline of Academie Culinaire de France UK (now the Royal Academy of Culinary Arts)

Watch the video below to hear the pair discuss how service will be the key to success post-pandemic. Rebecchi said:

"Service will be the most important factor to help us recover post-Covid. Guests will want to feel safe and comfortable and expectations will be high. We need to make this a priority when the sector reopens."
