Head to Head - James Golding & Cyrus Todiwala OBE DL

Academician Cyrus Todiwala, The Café Spice Namaste was speaking to James Golding group chef-director of the Pig hotels. James Golding started his career as an apprentice on the Royal Academy of Culinary Arts /Bournemouth & Poole Specialised Chefs programme under Anton Edelmann at The Savoy and has continued to support the course throughout his career, now being based on the South coast James regularly visits the college to deliver Masterclasses and has trained many remarkable graduates himself. Cyrus Todiwala OBE DL has been a huge supporter of the Royal Academy and Adopt a school for many years.
Both James and Cyrus are both passionate about the responsibility of the Hospitality industry to respect to the Environment and promote high animal welfare. They have both been instrumental in the development of the Royal Academy of Culinary Art Sustainability food philosophy which serves to inspire the enjoyment of food using fresh, natural ingredients from sustainable, natural sources. It provides a platform to support local producers, communities and projects to support and promote sustainable and ethical food cultivation and to increase the health and wellbeing of all.
To James and Cyrus this means seeking out small producers and local butchers in the habit of working sustainably and with passion for their products, and ensuring the key ingredients on their menus are provenance and seasonality.
